build(deps): bump xml2js and @capacitor/assets

Removes [xml2js](https://github.com/Leonidas-from-XIV/node-xml2js). It's no longer used after updating ancestor dependency [@capacitor/assets](https://github.com/ionic-team/capacitor-assets). These dependencies need to be updated together.

Updates `@capacitor/assets` from 2.0.4 to 3.0.4
