I am getting this error TypeError: '>' not supported between instances of 'str' and 'int' when trying to run simple build command
ansible-builder build --tag mytag

As documented here, the value for version must be an integer. If you quote it like a string, you will get that error.

This is incorrect:

version: '3'

This is correct:

version: 3
