test: Fix AMI selection when performing version compat e2e #6170

Fixes #N/A

Description

Fix AMI selection during version compat E2Es to not use lo.Ternary since that function doesn't allow short-circuiting like an if statement, causing failure when we never wanted to resolve the second argument.

Tracked down the failing drift test to an unrelated flake, other E2E failures exist on main and should be fixed through another PR.
