docs: Bump latest dependencies for Docusaurus

Bumps the latest versions of the dependencies for the Docusaurus documentation. Most notably, this includes the new major version 3 of Docusaurus itself (dcece08), which required minor breaking changes to be adressed (da766f5, b3b4154). The changes follow the official Upgrading to Docusaurus v3 guide.

This is expected to close #227, #229, #231, #232, #233, and #234.
