Refs: This warning on a terraform plan, which reads:

Use the aws_s3_bucket_server_side_encryption_configuration resource instead

(and 25 more similar warnings elsewhere)

If the manual process seems daunting, consider using tfedit, as suggested in the discussion here.

Closing for now as our remaining usages are in module dependencies, which have to be handled upstream. Dependabot should then take care of them.
