Enforce UTF-8 encoding for incoming email body

This addresses the following issue: thoughtbot/griddler#304

Fix outdated reference to Amazon::Ses

I missed a Railtie reference to Amazon::Ses.

Rename gem and add Rails 5 compatibility

The 85x14/griddler-ses gem hasn't been supported in a while. This adds Rails 5 support and renames the gem for clarity.
