What this PR does:
Update Thanos to latest main version. This includes thanos-io/thanos#6420 so now expanded postings will be cached.
Added two new configs
estimated_max_series_size_bytesandestimated_max_chunk_size_bytesto reduce data overfetch issue.Checklist
