Cosmos v0.40.1 fixes

Description

This PR is just a reference point of all the fixes that we should apply to Desmos once that they are merged into Cosmos.

This branch is based on the following branch: RiccardoM/cosmos-sdk v0.40.1-fixes. It currently contains the cherry picks of the following Cosmos PRS:

• Removed GetValidator caching to fix concurrency error cosmos/cosmos-sdk#8546, fixing the impossibility of running concurrent queries on the staking module

Closing as all the fixes have now been included inside the latest Cosmos v0.41.x series, to which we already updated
