chore(codecov): remove codecov from CI

In codecovs 4.0 major release - thet introduced breaking changes that requires a token: https://github.com/codecov/codecov-action/releases/tag/v4.0.0

• A token can be retrieved using this method https://docs.codecov.com/docs/adding-the-codecov-token but we don't have codecov installed in our github org so that would need some admin setup. We do however have code coverage from backstage that we can use instead. Will switch to that in separate PR

Yes I'm writing it now - created PR from gh CLI and didnt want to use vim
