Some fixes and refactors around profile and stack resources

Refactors resources to decouple stack resources from profile metadata.

Some other changes:

• Configuration is not overwritten on update now.
• Profile to use when no flag has been selected can be selected now with elastic-package profiles use. Fixes Introduce concept of current profile #361.

Closing this, bulk of the refactor was already merged in #1140 and cloud provider moved to #1230.
