Upgrade to Storybook 8.x

Summary

Storybook v8 has recently been released, adding quite a few exciting features. We want to check how good the updated prop type generation is to see if we can use the same generators for the new documentation website instead of maintaining our own. And being on the latest library version is always good, too :)

Acceptance criteria

• Update storybook and related dependencies to their latest versions
• Ensure storybook runs and builds as expected
• Update storybook build scripts if necessary
