Partial removal of lodash from charts, docs, selectable and datepicker components #3053

Since this is a community submitted pull request, a Jenkins build has not been kicked off automatically. Can an Elastic organization member please verify the contents of this patch and then kick off a build manually? |

Thanks for starting to dig into these!
For future changes, any dependencies on lodash
inside test files can remain. We're mainly interested in removing it as a runtime dependency.
