Repoint Links to Moved Fides Documentation

With the deployment of https://github.com/ethyca/fidesdocs/commit/7438c1419f7e8050a8ab6116caf3af66e89d5d4c the link to https://docs.ethyca.com/fides/overview is broken in the Admin UI. This PR points that link to the root of the docs site instead.
