This updates the test matrix to exclude no longer supported versions of Node and include newer Node versions (16.x, 17.x, 18.x, 19.x, and 20.x). Since with this test matrix the Gatsby integration keep failing and the whole Gatsby thing seems to be incredible frail by now and I don't use Gatsby anymore (nor do I think that anyone should be using Gatsby anymore) this also removes the Gatsby integration tests
