loki-stack helm charts is deprecated

Hi,

First of all, as a newbie here, thanks for the whole project!
I wanted to report that loki-stack Helm chart seems to be "deprecated" by grafana. See here.
So I guess it should be replaced by the Monolithic mode one.

Thanks for reporting that.
Reading the linked post and the READMEs in the repositories, https://github.com/grafana/loki/tree/main/production/helm/loki seems to be the latest maintained loki helm chart. And https://grafana.com/docs/loki/latest/setup/install/helm/install-monolithic/ shows how to install it in monolithic mode to use the local filesystem for log storage, which will be similar to what we have at present.

@mjtrangoni would you like to work on updating the loki setup in flux monitoring example?
