Change package name to gaiaunlimited

Following some discussion on slack, the package name is now gaiaunlimited.

It seems that once a project has been setup at readthedocs, you need to manually request the project slug (as in <project slug>.readthedocs.io) to be changed [1]. I decided to just setup a new project with the new package name since the project is just starting out and we are not too worried about redirecting/broken links. I will delete the old gaiasf.readthedocs once the new one seems to be working fine.
