Since the EOL of Node.js 16 in September, more and more packages are requiring Node.js 18 for their latest version. We should update our dependencies accordingly and require Node.js 18 for building Cocoda.

(Note: As Node.js is not a runtime dependency for Cocoda and we are recommending to use the static download for installing Cocoda, a major version bump is not required in my opinion. However, as our own server currently builts the dev branch and is using Node.js 16, I'll wait for the merge into dev until we moved to our new server.)
