In its first iteration, the acceptance_test workflow would only run the EBS acceptance tests. These are the most used, therefore it made sense to start with them, but now that we confirmed they run, we can extend the tests to other packages. Right now only ebs and ebssurrogate have acceptance tests, so we only run those.

This PR adds a schedule to run acceptance tests every Sunday at 4:00 AM (UTC), and adds a job to run acceptance tests on the
ebssurrogatebuilder as well.
