Refinery documentation doesn't contain a list of all env vars that it supports and their meaning. While revamping docs, we should include this.

## Which problem is this PR solving?

Refinery currently supports the user of env vars for several
configuration options but does not document them

Fixes #579

## Short description of the changes

Adds an env var section to the configuration documentation in the
README.
