Description & Motivation

As a follow-on to #74, now that we are not constrained to using versions that GitHub Pages allows for their automatic stuff, this PR upgrades versions (especially of Jekyll) to more recent versions and eliminates a bunch of unnecessary dependencies.

There are some deprecation warnings originating from the minimal-mistakes package, but that's ok (for now).
