Documentation on README to enable auto build fixes to update.sh

The update.sh script does not work well if you fork the repo, insert environment variables and do not hard code it to jojomi.

Also updated the README to explain how if you want your own tags this works. It looks like there has not been a push since v0.76.0 of this so needed a fresher version,

These live in git pull richt/hugo:0.81.0 for instance now, will issue PR

I always planned to redo this with all the lessons learned since it started, but never got around to that. So this is a improvement I like to see :).
