🐛 ClusterCacheTracker: fix panic in error creation

What this PR does / why we need it:
While debugging something else this line panic'ed a few times.

It looks like it was unable to convert input.Kind into a string because some of the timestamps in ObjectMeta of input.Kind were nil. (this happened in the context of watchClusterNodes)

Independent of that it seems reasonable to only use the type here instead of trying to log the entire object. Especially as the object is empty. With %T it will use e.g. *v1.Node.
