fix: scaleway documentation, remove SCW_DEFAULT_ORGANIZATION_ID

Description

My recently added commit was in fact erroneous: ec2ad73

The SCW_DEFAULT_ORGANIZATION_ID is not to be added, but, in fact, to be removed as stated in this previous commit that removed it: bc5232d
