pkg/plugin/{v2,v3}: controller-runtime v0.6.2 #1625

This PR bumps the controller-runtime dependency for both v2 and v3 plugins to v0.6.2, a recent patch release.

  • pkg/plugin/{v2,v3}: controller-runtime v0.6.2
  • docs/: update testdata

Just to share: we have more required changes to do in the docs. See; #1492

Also, would be nice we are able to automate and check it.

The bumps are no breaking changes and are not upper versions.
