As suspected, watchers for certificates are consuming a lot:

If I remove the cert watchers:

This overhead would grow with cluster size.
So there's definitely something to do here

why not call it PROFILE_PORT since what we pass here is is just the port like we do in the agent and pls add profile md file to doc with examples of the different collections with HOWTOs

the operator already uses this kind of addresses (e.g. for its metric server) so I prefer to be consistent within this repo
I've added some doc in DEVELOPMENT.md

Ok, finally I did the perf optimization in this PR.
I'm seeing ~30% less memory used by the operator with a better cache handling. I imagine this could be even better on clusters with many configmaps/secrets.

cc @nathan-weinberg it would be nice to run a perf test with this PR to confirm the gains

Limit watching to strictly the couple of desired configmaps or secrets
that is actually needed.
Previously, all CMs/Secrets were being set in cache under the hood by
the controller-runtime API, even if only handful of them were needed.
