I would like to recommend to change the section about using a CIFS/SMB share as datadir.
It seemed possible at first, but eventually resulted in hard-to-diagnose errors that are related to #2850 (reply in thread) and nextcloud/server#17980.
If one really wants to use a CIFS/SMB share as datadir one probably should not use Nextcloud AIO. Alternatively, one might want to consider using a custom image for the main Nextcloud container that is not based on Alpine Linux.
