Description

Adding a compatibility matrix for the client. Also adding OpenSearch 1.3.1 to the test workflow matrix.

would it be better to use 1.x.x or 1.2.x instead of listing all versions? since there shouldn't be breaking changes from OpenSearch in the same major version

Sure, for now I kept it consistent with the other clients since some clients have 1.1 version as well. We could update it once the matrix becomes large enough.
