feat(ui): fix eslint config and add prettier

Fix eslint config:

• Cleaner version
• Updated from the deprecated format to the newer flat format (https://eslint.org/docs/latest/use/configure/configuration-files-deprecated)

Added prettier:

• Ran prettier on all UI code

Added a workflow job to check eslint and prettier
