[NOD-890] fix: Enrichment on RE events for tracing purpose

This PR contains changes made on Registro Eventi's event stored in CosmosDB. The change are related to some essential fields that were not correctly set: the update permits to correctly set the values in order to better perform debugging and tracking operations.
Some of these fields are iuv, notice_number, cart_id and more.

• Added more fields on event saved on RE collection

Motivation and Context

This update is required in order to better track WISP dismantling-correlated operations
