Fix otel properties documentation

Current properties look like this:

When having this interface definition:

@ConfigMapping(prefix = "quarkus.otel.exporter.otlp")
@ConfigRoot(phase = ConfigPhase.RUN_TIME)
public interface OtlpExporterRuntimeConfig extends OtlpExporterConfig

Properties override doesn't work.

This PR is a workaround.
