this notably fixes all deprecation warnings, and just reorganizes the file to be more "up-to-date" and define stuff the recommended way (most stuff is taken from fabric's mod template) also removes the unused maven publishing plugin :D

this pr simply updates the mod to 1.20.6 (despite no changes being needed), and fixes a few small things in the gradle buildscript, see 4590c98
