Context
As part of https://github.com/solo-io/gloo-mesh-enterprise/issues/7926, the kubernetes dependencies are being updated from 1.25 to 1.26. There are multiple components involved in this effort and all the relevant PRs can be found below. A few of them have breaking changes, so a new minor version will be created when appropriate.
