Highlights the standard order for downgrade and switches the procedures to reflect this

Checklist

Please go through this checklist and make sure all applicable tasks have been done

  • Check RBAC rights for Kubernetes / OpenShift roles

Should we make it clear here that this might need to be repeated if the user is downgrading multiple versions down?
