It seems the current configuration is a bit too "aggressive". Ok, it auto-sets the language/timezone to greek fine, but there is the small problem of not having any ability to type english (!) right now :P I don't think this is what we want so we need to figure out how to enable english/greek keyboard switching again.

Add "en" langpack (hoping to solve issue #2)

Add "en" langpack as well, in the hope that this will solve the
problem that only "gr" keyboard is available.

We need to force both "en" and "gr", and set the switching shortcut to Alt+Shift, which is the common keyboard shortcut to switch between layouts.
