We've been using Varnish 6.6 for the varnish-6 image. 6.6 was only ever a "fresh" release, and is no longer supported.
Varnish 6.0 is designated a LTS release and is still supported (and crucially, updated) - see https://varnish-cache.org/releases/
There should be no compatibility issues with this downgrade.
