chore(azure_monitor_logs sink): update log namespacing #16475

Epic #15453

One thing I haven't done, which I think doesn't need to be done, but it's worth double checking. We insert the timestamp into a field in the output record. This is still using the log_schema timestamp key, rather than any value set by meaning:

 object_entry.insert(
            log_schema().timestamp_key.to_string(),
            JsonValue::String(timestamp.to_rfc3339_opts(chrono::SecondsFormat::Millis, true)),
        );

The name of the field to use is set as header:

        let timestamp_key = log_schema().timestamp_key();
        default_headers.insert(
            TIME_GENERATED_FIELD_HEADER.clone(),
            HeaderValue::from_str(timestamp_key)?,
        );

Explanation

A regression test is an integrated performance test for vector in a repeatable rig, with varying configuration for vector. Negative values mean that baseline is faster, positive comparison. Results that do not exhibit more than a ±5.00% change in their mean optimization goal are discarded. An experiment is erratic if its coefficient of variation is greater than 0.1. The abbreviated table will be omitted if no interesting change is observed.

🤔 I'm not sure I follow, or just don't understand the reasoning to keep using the log schema

That's just what it did before. I'm not really sure why it was originally done that way either, but because it is unaffected by the log namespace work, I'm not seeing a compelling reason to change it.

The other alternative would be to hard code it to "timestamp"? Would this be better?
