Bumps jupyter-book from 0.13.0 to 0.14.0.

Pin to jupyter_server==1.* no longer needed, as jupyter-book 0.14 now uses jsonschema<5 instead of jsonschema<4 before. To be precise, jupyter-book=0.14 now uses myst-nb<0.18.0 which depends on jupyter-cache<0.6.0 which doesn't depend on nbdime anymore which means jupyter-server is no longer required. Reverts 73614b3.

Bug with header anchors not working anymore causing jupyter book build to fail on readthedocs. Need to find a workaround

Noticed some GitHub links being shortened with an :octocat: added in front. Not sure how I feel about this 🙃

Jupyter Book 0.14 or some sphinx theme shortening GitHub links
