With r27396 core does not longer output its default gallery styles when the theme supports HTML5 galleries.
After 5de96cd we should add our own soonish.

Could we just steal core's function and put it right back in _s?

Actually, I might submit a PR for this. I think it would be better to do something a little more innovative and simple rather than some PHP function.
