feat(cognito): support emailVerified attribute mapping

Reason for this change

There isn't a way to automatically validate the email a signup time in case of custom OpenId provider.

Added missing attribute.

Yeah, it is probably redundant to document the attribute given that ProviderAttribute.other is already explained.
I suggested it to silence the linter error (documentation changes are required for feats).
But you can always request an exemption and see if the core team is ok with it.
