🌱 Update docker to v26.1.5 #26

What this PR does / why we need it:
Update docker to avoid false positives for https://avd.aquasec.com/nvd/2024/cve-2024-41110/. Although we do not believe the CVE affects CAPD, CVE scans are likely to report it as affected.
