Replace UT_DisplayPkt with UtPrintx

Is your feature request related to a problem? Please describe.
UT_DisplayPkt is just a specialized version of UtPrintx, duplication of logic (don't need the custom version).

Update internal unit tests to use UtPrintx, make UT_DisplayPkt a macro that just calls UtPrintx

Describe alternatives you've considered
Deprecate and eventually remove UT_DisplayPkt (note there are external users that would need to update)

Additional context
nasa/osal#973 - this actually fixes UtPrintx, once in no need for custom fuction.
