Basically opening this PR to make it easier for the core team to upgrade to JupyterHub 5.1.0 (and send a gentle nudge) - this PR comes with the docker images required for testing the new version:

default_images:
  jupyterhub: quay.io/nebari/nebari-jupyterhub:krassowski-jupyterhub-5.1
  jupyterlab: quay.io/nebari/nebari-jupyterlab:krassowski-jupyterhub-5.1

Tested locally with the new images, looks good to me, here is a single snapshot as a confirmation of the version deployed:
