Update the big5 workload with specifications for the associated data corpus

Description

Added specifications for the data corpus associated with the big5 workload. Updated the README and added several workload parameters.

###.Testing
Carried out sample runs against an OpenSearch cluster.

Ran integration tests:

  py38: commands succeeded
  py39: commands succeeded
  py310: commands succeeded
  py311: commands succeeded
