Re-adding the payjoin v1 and v2 explainer articles from the #63 overhaul PR, they fall under their own "How it works" section, so they won't interfere with the other explainer articles. It would be nice to add these since we have a lot of "why payjoin" content, but not much dedicated to explaining how the protocol works.
