This removes this compatibility with version 3 of Podium. This resolves podium-lib/issues#23 * Only support node 12 and 14.

Update dependencies to add the replacement of request.js with Undici in the client and support manifest files which can hold an Array of proxy endpoints instead of using object notation for proxy endpoints.
