Fix: let Squoosh default image quality internally #4906

Closes #4905

Changes

The new Squoosh service was setting the image quality to 100 by default, interestingly enough the mozJPEG library will actually take that as a sign that the image can get larger than the original 🙃

This removes our defaults and updates our fork of Squoosh to make sure the built-in defaults are used instead (matches the current sharp implementation)

Testing

All existing tests should pass
