Institutional Knowledge and the turkey question

A daughter whilst watching her mother preparing a turkey, asks her mother "why do you cut off the front and back of the turkey", her mother replies, "my mother did this every time she prepared a turkey". Without further delay, the daughter runs off to ask her Grandmother, the same question. The Grandmother replies "my mother did this every time she prepared a turkey". She then heads off to her great grandmother's house and asks her the self same question. And got this reply. "In the old days, the oven was so small......."
