Asian noodles (Modified version from Tasty), you can still use the videos for a general idea) Or super fancy version from Joshua Weissman

Gives about 6 servings

Ingredients:

Saute

  • 4 clusters (or ~200g) of asian style noodles or 200g of similar asian noodles (rice, udon or even ramen);
  • 2 carrots, cut in slices;
  • 4 green onions, cut in slices;
  • 2 cloves of garlic, chopped;
  • 1 bell peppers, cut relatively large;
  • 1 cup of edamame;
  • 2 cups of selected protein in the following preference order : Shrimp, firm tofu or cooked chicken. If you use tofu, marinate it for 30 minutes prior in chicken broth to add taste.

Sauce

  • 6 tablespoons of soy sauce;
  • 4 tablespoons of brown sugar;
  • 2 tablespoons of sambal oelek.

Steps:

  • Add water to a pot and bring to a boil, cook the pasta;
  • Add oil to a Wok, cook green onions and garlic for 2-3 minutes. Save some of the green slices for serving;
  • Add the carrots, bell peppers and edamames and protein of choice to cook, cook 10 minutes or until the carrots start softening;
  • Meanwhile, in a bowl, mix all of the sauce ingredients and whisk until the brown sugar is dissolved in the mix;
  • When the noodles are ready, add them to wok;
  • With a spatula, try to cut the noodles to ease the later steps;
  • Add the sauce mix to the noodles and stir until the sauce has incorporated, it should thicken a little too.
  • Serve with the remaining green onion slices on top.
