Curry cabbage "noodles" and sautéed beef

Ingredients:

Cabbage Noodles:

  • 4 garlic cloves chopped
  • 1 tbsp of olive oil
  • 2 tsp of curry powder
  • 8 cups/680g of thinly sliced cabbage Cut the cabbage in half then slice thinly across the longest side to have "noodle-like" cabbage pieces

Sautéed Beef:

  • 2 tsp of cornstarch
  • 1/4 cup of water
  • 2 tbsp of soy sauce
  • 2 tbsp of honey
  • 2 tsp of curry powder
  • 1 lb of ground beef
  • 1 onion chopped
  • 2 bell peppers diced
  • 1 tbsp of olive oil
  • dill for topping (optional)

Steps:

Cabbage Noodles:

  1. In a large skillet, brown the garlic in the olive oil. Add the cabbage and curry powder and cook for about 8 minutes, stirring frequently, until the cabbage is al dente.

Sautéed Beef:

  1. In a bowl dissolve the cornstarch in the water. Add the soy sauce, honey and curry powder. Set aside.
  2. In a large skillet, brown the onion and the ground beef in olive oil.
  3. Add the bell peppers and cook until they soften. (Approximately 5 minutes)
  4. Add the sauce and bring to a boil while stirring.

Serve the "noodles" in a bowl and top with the beef and dill if desired.
